I ended up breaking the sauce as I was adding the clarified butter. The butter is supposed to added slowly and in small amounts, but added it, at one point, in too large a quantity and ruined it. I started over and finished it for the dish I was preparing.
Hey guys, here's a shout-out to another very cool young man, who works at the pool, at Calvert Marina. When I was there last year, there was another young person, also from Bulgaria, working in the States for the summer. It's really great to see this exchange program in effect, which gives young people the opportunity to get experience working in a foreign country, allowing them to build confidence and create great resumes. Ivo's living quarters are pretty cool because he's living on a boat that is permanently on land, but has electricity hooked up to the boat. So, he's living on a boat, but it just happens to be on land :) He is one of the most solid and politest guys I've ever met. He definitely good at his job, because the pool is meticulously clean, and, unlike some other pools I've been in, he's got the chlorine levels just right. If you're in Calvert Marina this summer, be sure to stop by and say hello. I'm sure he'd appreciate the break in the boredom. We had him over to the boat one evening, for some rib-eye steaks, and we learned a little about Bulgaria, a country that I didn't know much about before I met him. I wish I had taken more photos for him, so his family and friends could see more. Compliments to Ivo, and I we all wish him great success! :)
